When I was in Southwest France visiting the Basque country my friend requested I make an American classic for his nephews and family. “Mac’n’Cheese”.
“But chef, I want you to make a Basque mac and cheese!” <insert French accent>
This turned out to be really fun since they had a local cows milk cheese, dried peppers from the area, amazing baguette and other other local staples.
I took the blueprint for a great mac and cheese and then made it using Basque ingredients.
It was… delicious 😋
So below is the Basque mac and cheese I whipped up on a whim at my hosts’ kitchen in Mont-de-Marsan 🇫🇷 .
I’m including substitutions so you can tailor this mac and cheese however you like.
