Dropping (2) recipes today that will make a delicious meal set in the midst of all this summer heat. A nostalgic chicken recipe that I’ve been eating for many years… and a perfect chilled rice salad that is a 10/10 on the flavor scale.

”Few” Knife Drop
One thing I love about the years I spent cooking in the Food & Bev industry is the amount of friends and contacts that I’m still in contact with… these types of friendships with other chefs, winemakers, sales reps, knifemakers and producers/growers are priceless. Having access to top quality is a gamechanger.
A good friend of mine had a difficulty come up. He’s an amazing knife maker and his eye for aesthetics has always been striking to me. That he used to be one of the countries top pastry chefs should come as no surprise.
Anyhow, I commissioned him to do a small release for the “Few” line of Octopod Knives. I didn’t realize how much interest there would be for these beauties… but they are live now on the site and I’m guessing they’re gonna go quickly.
This knife drop for the “Few” release are paring knives.
Aside from the mandatory chef knife, I’d say a good paring knife is a longterm kitchen essential. Small knife cuts, coring, peeling, etc are all improved with a smaller blade that fits comfortably in the palm of your hand.
The steel is Nitro V Stainless; specifically designed for culinary use. Rust resistant, easy to maintain and take on a razor edge (I already stropped and buffed these to a razor edge, doubtful you’ll ever get a blade as sharp out of the case as what we’ve prepped here for you. 😇 )
What I love most about these, apart from being handmade… the handles are made from repurposed skateboards that my friend used to ride around on his teen years. The handles are striking, gorgeous… and one-of-a-kind.

I’m really excited to share these 2 recipes with you… because both of the primary ingredients have a reputation for being bland and boring.

Known in the health and fitness worlds as being go-to’s for lean protein and good carbs, respectively… most versions are dry chicken and flavorless rice… 🤢
What follows below are two dynamite flavor bombs that are served chilled.
That means, perfect for the summer… and you can keep on hand in the fridge for days at a time and have your meal ready in <5 mins.
Coronation Chicken 🇬🇧
This is a recipe that is over 50 years old. Coronation chicken was the highlight menu item at Queen Elizabeth’s inauguration. Momma Octopod 🐙 has been making this since I was a kid… the recipe was given to her by an elderly British lady. This specific recipe is 50+ years old and over the years I’ve made some tweaks and changes to max up the flavor.
Traditionally a whole chicken is poached, chilled… then served with a cool, creamy, tomato, madras curry-scented sauce slathered over the top.
Think of this as Luxe Chicken Salad. 🤤
You can easily eat in lettuce cups for a lighter, low carb lunch; serve as a tea snack, or as a wonderful chilled dinner on a hot summers night.
My recipe varies from the traditional in that we are using chicken breast only. We are gonna use a better cooking method than the traditional poaching, which will ensure tender and juicy chicken.
I’ve also tweaked the sauce, and done an optional trick with the chicken skin to make an incredible crunchy, fresh herb salad to serve alongside
This is one of my favorite summertime meals… but it’s so delicious I’ve been known to make it year ‘round 😉

Summer Rice Salad 🍚 🥗
While Coronation Chicken in lettuce cups is lovely, my favorite way is serving alongside a most delicious, zippy and refreshing summer rice salad.
There’s an easy, no-fuss way to cook the rice… infuse a ton of flavor and adding fresh pineapple and green bell pepper take this underappreciated grain and turn it into an all-star salad.
