Most people love good fudge…
One of the most popular candy confections around, during the holidays people frequently express their care and affection to others through a box of fudge. 🎁
Fudge is so unique that it’s become an adjective when describing food: “fudgey” has become the name of a certain texture that is soft, yet hold shape, and implies a texture that will linger pleasantly on the palate.
These days there are dozens of different varieties of fudge, but for me… the pinnacle of fudge perfection is chocolate with walnut. The sweetness of the fudge is offset but the savory, nutty walnuts which brings the entire confection into balance.
It’s widely known that See’s Candies fudge is a Warren Buffet favorite.
I did a quick google search and found something interesting: Papa Buffet’s fave fudge comes in at a whopping $35/lb.
I’ve the fudge before. It’s good.. but let me tell you, we are going to make a truly heavenly walnut fudge in ~30mins for pennies on the dollar.
Better taste, at a fraction of the cost. Win-Win.
The problem is most people won’t even attempt to make their own because candy-making is notoriously finicky.
Boiling sugars to all the exact stages: soft ball, hard ball, soft crack, hard crack and everything in between.
Then the fear of either burning your sugar (which smells acrid af 😩) or worst yet, spilling said molten-sugar and having to clean it up.
But what if it didn’t have to be this complicated?
I grew up baking with my mom around the holidays. When I was in restaurants I was largely absent around family functions because Holidays are prime-time and expect to be working 6-7 days a week.
Since I’ve been out of restaurant life I’ve come to appreciate revisiting these family recipe treasures.
This year was the first time I’ve made fudge with my mom in forever. We normally divide and conquer on the baking… efficiency and all, but this year I wanted to make this with her since she’s been making this same recipe my whole life and she’s tried many others.
Even though I’m the “professional”, this recipe is all mom’s and so it was fun hearing her talk about any variables that could happen so I can pass them along to you
What we have is truly heavenly fudge. It’s fool-proof, cost-effective and (most importantly) absolutely delicious.
