If your’e new to Taiwan cuisine, it has a distinct flavor profile that is different from Hong Kong or Mainland Chinese cuisines.
Taiwanese cuisine features clean/fresh flavors underscored by savory umami but is not spicy.
This recipe comes straight from a Taiwanese friend and while there are some local varieties of herbs and spices that are Taiwan-specific I’ve made substitutions below to replicate this in a western kitchen and still have the full essence of the flavors that make Taiwanese cuisine so dang delicious.
This fried chicken is crispy on the outside, tender on the inside and bursting with flavor. It’s also very simple.
