“Few” Knife Release
Circling back quickly… The limited knife release literally sold out within minutes.
To be honest, I wasn’t sure how much interest there would be so it was nice to see such a quick and enthusiastic response.

Jerk Chicken 🐓 🌶 🔥
The term “BBQ” is very polarizing because depending on what part of the world you are in, it can mean direct heat, indirect heat, rubs, marinades, no rubs, no marinades… it gets dizzying but fun.
When you think of ‘BBQ’ & ‘Jamaica’ you will surely think of Jerk Chicken.
In this style of BBQ, marinated chicken is cooked over low-coals that are made by lighting fresh pimento branches (which is the same tree that allspice berries are taken from).
The marinade is very spice forward… all-spice being essential. On top of that, fragrant herbs 🌿 and chilis 🌶 combine with some salty-sweet elements to make a flavor bomb paste.
So how do we adapt this for our backyard?
You likely don’t have fresh pimento branches in your back yard to light up. 😂
Fear not, I’m going to show you a hack method to get the same perfumed smoke into your chicken, without have to baby sit and flip every few minutes.
While a lot of marinades fail to deliver on the spicy, robust flavor… I’ve been using this recipe for years and has never let me down. Unless you’re a chili pepper cyborg this will bring the heat fully, and I’ve got some tips to bring it down for those that want just a hint of heat
