One fun thing about the holidays is to indulge in some candies or treats that are made just for this time of year.
Fudge & Blond Brownies are absolute faves amongst my family and friends but here’s another that is super tasty and also gluten free.
These are really fun to make a big batch of and give out to special people or freeze to pull batches of throughout the year 😉
Chocolate Peanut Butter Bites
A lot of pro bakeries use feuilletine (crunchy crepe flakes) to make crunchy layers in pastry but in this case we can use Rice Krispies and get the same effect.
Make the interiors, form into spheres and chill, then dip and chill.
These are so tasty!
Ingredients
For Filling:
9 cups Rice Krispies
1 cup butter
6 cups (48oz) peanut butter; smooth is trad but could chunky
5 cups powdered sugar
For Glaze:
2 squares of coating chocolate
4 cups of chocolate chips
2 tsp coconut oil
Method
For the filling:
Mix together all of the ingredients in a large bowl. You can use a standmixer or manually mix.
Shape into spheres with a spoon or TB measure and place on wax paper (or parchment) and place in fridge until cooled.
To Finish:
Melt the glaze ingredients in a bain marie until just melted and homogeneous. Place bowl on counter
Using a fork, dip each sphere into the coating an replace on the wax (or parchment paper) and chill again in fridge to solidify coating.
As stated above you could take these to Holiday parties, serve as a finish foe dessert or freeze and keep on hand for the upcoming year to have on hand for unexpected guests.
