Given the time of year, lower temperatures and less daylight… comforting foods are soul satisfying and should be capitalized on.
This recipe, like the last one, only needs a few ingredients and some quality spices. The Guiness beer brings a ton of flavor as does the dried shiitake mushrooms which can be found at any big supermarket or Asian market.
Use an electric skillet for maximum surface area. If not a couple of browning batches in a dutch oven works.
Another tip: buy beef chuck boneless short ribs when on sale and it’s the same (if not cheaper) then buying “stew meat” which tends be more tough and inconsistent.
