But what makes an amazing meatball?
Probably easier to describe what makes a crappy meatball.
Dense, dry, bland bowling balls are not what we are after here.
There might be multiple approaches but what follows below is a recipe that was finally written down and is being enjoyed by the 4th generation now.
Madeline was an Italian mom who lived down the street from my dad and his sister when they were growing up.
Cooking up delicious dishes daily was how Madeline showed love to her family and special neighbors.
Among favorites were Madeline’s red sauce, cheesecake… and especially meatballs. 🤤
These are amazing and since my aunt was in town the other week we finally put pen-to-paper to record this recipe that has been made for decades but never written down.
