This Sunday is Mothers Day
If you want to really impress the moms in your life, drop this heavenly Coconut Pound Cake and witness the “oohs” and “ahs” of delight.
I firmly believe that nowadays, gifts from your kitchen are some of the most memorable and unique gestures you can provide… because they require your time.
Also, most people don’t really know how to cook well so you’ll be an admired hero.
Now, as giftcards are top of the list as most popular items to buy, spending time creating something delicious and sharing it remains one of the most thoughtful and giving expressions of gifting.
This pound cake is dynamite.
If you’re thinking of the lifeless, crumbly, oily pound cakes that StarYucks used to serve, this isn’t it.
This coconut pound cake is soft, tender and luscious with a fine crumb.
Then a coconut syrup is drizzled over the base as it cools. Finally, the cake is turned out and gilded with a coconut cream cheese frosting 🤤
It’s to die for.
Really.
Pound cakes are notoriously tricky so I’m going into some detail below. Meaning any pound cake batter you make from now on will not split, separate or turn into a greasy mess. Surprisingly few pound cake recipes even discuss this.
Another bonus is this pound cake will serve 16 people easily (I’ve had 20+ served at a potluck) so it goes a long way.
Or save some and eat off the poundcake for a few days 😂
This is an old family recipe that I used to make frequently for potlucks and dinner parties when I was still cooking professionally. It was always a rave hit. I realized that it has been years since I made it so this is perfect timing as it’s one of Momma Octopod’s favorites.
Your love for mom and those special in your life will be conveyed instantly in the first bite.
