Because I can’t be trusted to control myself with a full Basque cheesecake, I took the one I baked for this Substack to a gathering of friends. 2 people knew what it was, and instantly starting elbowing for position… the remaining 14 people were all converted on the spot with resounding “ooh’s”, “ah’s” and “omg’s!”
One lady in particular said she was skeptical because of the top but when she tasted it was immediately in cheesecake heaven.
The only complaint was that I hadn’t made 2 😉
