It almost hit me as soon as I got off the plane in Asia.

As I began to settle in as I relocated from the US, immersing myself in daily living and the cuisines of Asia… I began having literal cravings for pasta.

I did a stint in an Italian kitchen many years ago and learned a lot but if you’ve been around here long you already know how I usually crave the spicy goodness of Thailand, Sichuan, Xian, India, Mexico and other similar cuisines.

Once the pasta cravings kicked in it was mandatory to find some shops that I could get some good pantry items to whip up a great pasta on a moments notice.

Aside from being crave-worthy soulfood, you can make a good pasta at home in less than 15 mins which is ideal for my current schedule since I’m back in kitchens working a lot.

When I get home, making pasta has turned into a sort of therapy that pays immediate dividends because it’s tasty af 🤤

Today I’m going to put some tips on making pasta at home. If you’ve wondered why the pasta dishes at your local Italian joint always seem to “just taste better”, there is a bit of alchemy to making a perfect pasta that I will share below.

Once you incorporate these into your pasta making you’ll probably find that your favorite pasta that you’re paying ~$28 for can be made at home for $7.

Expect more pasta posts in the future and I’m going to dive into some handmade pastas at a later date, including some stuffed pastas like tortellini and ravioli so keep an eye out 🙌

For now let’s make a classic pasta that I love going back to over and over. Just 6 ingredients that should be in your pantry mean that we are going to focus on the technique to nail this pasta 🤤
