Pineapple & Avocado Salad

Yup, one of the best summer salads you can make!

If you’ve been around here long you know that as a chef I’m not particularly fond of over-played fads like… avocado toast 😩 😂

However, this pinapple-avocado salad is so good I needed to share this with you ASAP before the summer heat comes to a close.

This would be perfect to serve at your Labor Day cookout alongside whatever proteins you are grilling; this salad goes with literally everything.

Keeping this short and sweet because the salad is so easy to whip up there’s no point rambling on this one.

Pineapple-Avocado Summer Salad

Make sure to shave the red onion thinly.

Pro tip: If your red onion smells really sharp or sulfurous you can shock the slices in ice water to take out some of the heat

Likewise, make sure to use a tangy orange like a sour or cara-cara. You need the acid.

Ingredients:

Ingredients:

3-4 c shaved romaine lettuce 

2 c medium diced pineapple (1.5 inch chunks) 

1 large avocado (1.5 inch chunks)

1/2 red onion, shaved thin

1 sour orange (or CaraCara), zest and juice 

1/4 red wine vin 

1/3 c EVOO 

1 TB honey 

Salt/black pepper, to taste

Fresh cilantro, chopped; for garnish

Method:

1. Whisk orange juice, zest, vinegar in a bowl and slowly drizzle in EVOO. Or combine in a jar & shake vigorously until emulsified 

2. In a mixing bowl, pour the vinaigrette over the pineapple, red onion, & avocado

3. Season with salt & pepper. Mix gently

4. Spoon the fruit mix over the shaved lettuce (The excess liquid will dress the lettuce)

5. Garnish w/ cilantro & enjoy!
