Itโs been a while since Iโve posted a new curry recipe
If youโve been around here for a while you know I adore curries of all sortsโฆ Thai, Japanese, Chinese and of course the curries from India, Pakistan and British Indian Restaurant (BIR) Curries.
Yes, Iโve left some curry countries out but you get the idea.
For reference Iโve written previously on Indian Curry with a nice starter recipe, then Chicken Korma, Pork Vindaloo, Lamb Mughlai Curry, Chicken Pathia.. all with recipes that are stellar and will make your friends and fam swoon!
This category of cuisine might be my ultimate comfort food, tbh ๐
A lot of people shy away from curries because they can be long and labor intensive.
The curry recipe below is more on the quick side and wonโt have you at the stove for hours (or even 1 hour!).
Punjab is a fascinating part of the world to me. Iโve heard it referred to as โthe garden of the middle eastโ because of the rich agriculture growing a myriad of spices, chilis and vegetables. Itโs also a region of interesting historical context due to the border it shares sandwiched between pakistan and india, both sharing the region near-equally
That can be a rabbit hole you can explore on your own but for today lets make a tasty curry that isnโt time sucking or labor intensive.
