Ok hear me out
If you haven’t been whipping up this delicious mashup of a scone crossed with a pancake you’ve been missing out.
Introducing the Welsh Cake 🏴
aka “bakestones”
aka “griddle stone”
The name refers not to a dense baked good, but rather the method of cooking.
You see these little cakes are made using a griddle or heavy-bottom skillet.
No oven necessary!
What is a Welsh Cake?
Imagine a buttery scone with a toasty exterior and much thinner (like a pancake).
Ideally they are served warm right off the griddle. Simply cut into halves and smear with soft butter and a jam of your choosing. (Just as you would with a scone)
Some purists opt for a butter only slather but that’s up to you.
Regardless, these make for a wonderful sidecar to any tea time or if you need to wipe up something quick for unexpected guests.
I won’t go into a long history on Welsh cakes but they are an integral part of British life and eating. When made properly these really are delicious.
Sharing my moms recipe below that she made for us growing up and is still making to this day. 🙌
Enjoy this simple but delicious treat.
