Soups are one of the most underrated way to show off your flavor skills on the stove.
When you have a delicious soup it can be a satisfying meal but also can be used as a base to build other things on top of, which I’ll show you today.

Leeks are a special favorite. The smell of leeks sweating out in butter is intoxicating comfort. What follows is a creamy Leek & Potato soup. Most “creamy” soups are too rich and one-note, so this creamy soup has no cream but still screams luscious ‘Soul-in-a-Bowl’ that can be eaten as is or dressed up.
