This weekend puts lamb front-and-center on the dinner table for many people with the Easter holidays having arrived.
Lamb is one of my favorite meats to eat and still seems to be largely misunderstood which is a shame.
Easter growing up would usually be a roast leg of lamb slathered in a fresh mint sauce spiked with lots of white vinegar. I can taste it right now as I type this out 🤤
Quick pro tip for lamb: sauces that have carry a lot of flavor/acid do well with matching up to the natural flavor of lamb. Think mustard… chimichurri… mint sauce etc.
To Give You Plenty of Options here is a list of recipes that range from ground lamb (delicious kofta 🤤 ) to a whole leg or shoulder that I would recommend making appearances on your dinner table throughout the spring time!
I’ll arrange these in order of ease starting with ground lamb
Next is a Provencal-style lamb stew that has a wonderful blast of citrus flavor. no need to make a sauce because you simply use the braising liquid. If you have a pressure cooker this can be ready in ~2 hours (mostly hands off!)
If you want a meltingly delicious roast lamb shoulder, look no further. It’s virtually impossible to overcook this lamb shoulder which makes it pretty bullet-proof

Finally, here is your guide to de-boning a leg of lamb, roasting and options for 3 different meals that would feed a family of 4 out of 1 lamb leg.
PS: If you want a dead simple alternative:
Fire up the charcoal grill.
Grab some ground lamb and add in some minced garlic, grated red onion, dried oregano, some salt and pepper: make burger patties.
While your coals are still lighting make a simple tzatziki sauce with whole milk yogurt, minced fresh garlic, chopped red onion, lemon juice, lemon zest and lots of chopped fresh mint. Season with salt and set aside.
Grill your lamb burgers to medium and finish by melting a slice of monterrey Jack.
Place a finished lamb burger patty on a toasted bun, top with your tzatziki sauce, add fresh chopped tomato and lettuce if desired.
*Or you can stuff the burger, sauce and veg into a freshly baked pita

My friend in Dallas does a great job grilling lamb - 9/10 times when I visit he makes it for me. Paired with Sea Smoke Pinot Noir and great conversation is always a night to remember. Wife makes a great Chess pie for desert.
