Great point about choosing restaurants that serve food you don’t know how to cook (or don’t want to). Even with my currently amateur cooking skills, I can make a pretty good steak at home for a third of the price as at a steakhouse. Just not worth going to steakhouses except when invited or particularly special occasions. Not to mention the wine (and the $40 corkage fee at most steakhouses here).

Good stuff. Looking forward to using the knife. You what is basically impossible to get right now is bone in skin on chicken breasts. Even at the butcher. No one wants to sell them that way.

Yes, hit or miss at supermarket now too. Buy whole birds; cheaper and jsut remove wings, legs for different preps.

Thats a great idea. The Chinese supermarket down the street has big whole birds, I will give that a shot. Any tips on breaking down a whole bird?

Yeah, I'll find a good vid to post. Numerous ways depending on what you're going for. 90% is being aware of joint locations; You can bone out an entire chicken with 4 cuts 😂 the rest is soft dissection
