I can't wait to read about spring/summer sides.

No AC means no oven and as little stove use as possible. I go from 90% hearty stews in the winter to 90% grilling once it gets warm but I always have trouble with sides for grilling. Grilled veggies/potatoes always turn out soggy for me.

Pod--on the topic of farm fresh food. Once in a while, farmers market ingredients can give me upset stomach (it was farm-fresh goose eggs, twice lol).

Any tips to help my stomach transition to new ingredients?

That's actually not a great sign for eggs 😬 . One thing, try rinsing/washing the eggs thoroughly before cracking. Maybe a bacterial issue. Did they have a collection date listed on them?
