I’d have loved to see the Mumbai Veg Samdwich featured on your sandwich encyclopedia. It’s a zingy, vegetarian street food that comes together in minutes with simple ingredients like onion, cucumber and boiled potato and is soooo satisfying
Tuna melt is my go to by a landslide, especially with pickled red onions
