Just bought your book, everything looks delicious but nothing is available in the grocery store today (bare shelves since our Prime minister is not letting in unvaccinated US truckers on top of all the supply chain issues.)

Looking at the pictures makes our rice and beans taste better, even once the supply chain issues are fixed, we might be eating beans and rice for a while as this dip has already put us negative. I put in a big chunk at the peak after a 5-year CD matured.

Great post thanks. I'll make an effort to make all these and offal more often. So far I just been cooking pho gan with tripe and eating canned sardines

What about fish? Are their organs used or are they unusable?

I'm always trying to find ways I can get the most out of a fish.

Fish organs are absolutely usable. Monkfish liver, is a delicacy. You can use most in making a seafood sausage, for example... if you buy whole fish regularly you can freeze the organs until you have enough saved up for usability

Pod--just bought some honeycomb tripe. (Asian Cuisine Grocery Store)

It is white. Does this mean it's already cleaned/blanched?

If it's white, then it has been cleaned but needs a blanch (IMO) in salted water spiked with vinegar. Bring a pot of salted water to boil and a dash of distilled vinegar. Then put the tripe in for 3-5 mins, strain and rinse off. Then cook as per your recipe. This isn't "must do" but makes a huge difference on final flavor
