The 'Original' Ratatouille 🤌
Just made this for the second time, and served it to the in-laws and extended family for a holiday meal. It was a huge hit. 👌
(I cheated with canned San Marzano DOPs this time, and the hack bought me some much needed extra time in the kitchen.)
💯 legit and delicious. Cold ratatouille the day after is my favourite
Ps: the tomato sauce is so good
I have avoided eggplant forever since a nasty incident of moussaka as a child. This recipe makes me want to get past that unfortunate incident and give eggplant another chance.
Oh, regarding ingredients, I have it as (hope I counted everything correctly):
17 tomatoes
6 zucchini - green
3 eggplant - Japanese
1 bell pepper - yellow
1 bell pepper - orange
1 onion - Spanish yellow
2 cloves garlic
½ bunch thyme
5–6 leaves basil
butter
olive oil - extra virgin
salt
All depends on your baking dish. The tomatoes I had were pretty small, so thats why i needed that many.
